Average mission runner doesn't have stabs afaik. I probed A LOT of mission runners during my eve time, I can count the amount who had stabs on my one hand.
I use a Lachesis myself. It damps to about 20% targeting range and it scrams at 48km. A lot of mish runners will be pretty far out when you warp in. The extra range is very nice. I expect you would at least miss 50% of the ppl you probe only cause of lack of efficient tackling.
I'm even decided to train overheating and buy a faction scram to get over 60km scram range to ensure a higher success ratio.
Other then that you should have easy time in most cases. Mission runner will already have dps on him from rats. In most cases my lach would make it solo. I do use a harbinger as well now a days and theres only been a few mish runner I couldn't break.
Don't forget to put a ship scanner on your alt to get the best possible ransoms 
Also using 7.5km scrams will surely make a lot of mish runners warp of before you are in range. Keep in mind if using cloak theres often a beacon declaoking you on warp in. The time it takes to get a lock after that might be enough to mish runner to warp out. It has happened to me, therefor I prefer not warping in cloaked.

My prober-alt can fly all Gallente T2 ships, but I just had her in a Helios because it had the cov-ops bonus. I could get her to probe the mission then return in an arazu to damp them.
I could also get the main in a falcon with some racials fitted (depending on what i scan down) so i could warp that in cloaked, tackle and permajam, then get the prober back in a gank mega or neut domi.
My main worry is that in probing the mission, BMing it then getting another ship, the runner will have fled/finished the mission...
Personally I would have your main in a prober, let the alt tackle in arazu or lachesis, while your main switch to a ship that deals a lot of dps outside 20km. Can you fly a covops with your main?
